Fueled Friday - Sweet Potato Banana Fritters
I'll admit I have my quirks about somethings. One of those is sugar in baby food. I know I shouldn't get that upset about it, but I just have something in me that I hate giving my baby food with added sugar in it. Its probably almost as irrational as my fear of birds, but I've learned to accept it, not fight it and just figure it out. So no I'm not one of those mom's that has to make everything perfect, from scratch, only organic, etc. But I really don't want to buy any baby food with sugar. And so I end up making almost all of my own. One of my favorites has been these sweet potato fritters. Okay they were originally "puffs" but after about one tray of small little puffs I gave up and made them bigger like fritters. Ellie likes the bigger ones better anyway as she can pick them up and kinda naw on them.
Sweet Potato Fritters
1 sweet potato
1 banana
1/4 c oat flour
1/4 tsp cinnamon
1/4 c ground flax seed
-roast sweet potato at 425F for 45 min or until really soft
-blend all ingredients in a food processor until smooth
-fill ziplock bag with mixture and cutoff tip
-you can either make small dots for puffs or larger fritters
-bake at 350 for 15-20 min for puffs, 30-35 min for fritters
