Fueled Friday - Baked Pumpkin Donuts
I've seen a few versions of these baked donuts and since donuts are a huge household favorite over here I tried out a few options. I was looking for something quick and easy I could make the boys, but also that they would love! They love donut holes from the grocery store, but I wanted something I could make and control the ingredients a bit more. Plus I think these are WAY better than grocery store donut holes. And anything made with homemade pumpkin puree is a winner in my book!
Baked Pumpkin Donuts
1c pancake mix
1/4 c pumpkin puree
2/3 c water
1 tsp pumpkin pie spice
3 tbsp melted butter
1/3 c sugar mixed with 1 tbsp cinnamon
-spray a mini muffin pan with cooking spray
-preheat oven to 400F
-mix pancake mix, pumpkin, water and spice in a bowl
-spoon batter into pan filling each muffin about 3/4 full
-bake 10 min
-brush muffins on all sides with butter and roll in cinnamon sugar
I've also made these with applesauce or mashed banana instead of the pumpkin and both versions are hits! I usually just use cinnamon instead of the pumpkin pie spice. You can use any pancake mix you like, just follow the directions for mix to water ratio. I prefer the Krusteaz or Costco's gluten free mixes as both are just add water and have good flavor. You can also make your own pancake batter, but with three kids I don't usually have time for that.
Its going to be a snowy weekend over here so I'm sure we'll have at least one batch of these going this weekend! Enjoy!
